Kumato and Cherry Heirloom Tomato Sauce
Ingredients:
4 kumatos (diced)
1 cup cherry heirloom tomatoes (halved)
2 tbsp olive oil
3 garlic cloves (minced)
1 small onion, diced (optional)
1 tsp sugar
1/2 cup dry red wine (optional)
Salt, pepper, and fresh basil to taste
Instructions:
Heat olive oil in a pan. Sauté garlic (and onion, if using) until fragrant.
If using wine, add it now to deglaze the pan. Simmer for 2-3 minutes to reduce.
Add kumatos and cherry tomatoes. Cook on medium heat until softened (10-15 minutes).
Stir in sugar, salt, and pepper. Simmer until thickened.
For a smooth sauce, blend; or leave chunky. Finish with fresh basil.
This sauce is vibrant and versatile—perfect for pasta, pizza, or dipping!
