Bruschetta Recipe

Ingredients:

  • 6–8 Campari tomatoes (or about 1 lb), diced
  • 1 small clove garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Mozzarella Cheese (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 baguette or crusty bread, sliced
  • 1–2 tbsp olive oil for brushing bread

Instructions:

  1. Prepare the Tomato Mixture:
    • In a bowl, combine diced Campari tomatoes, minced garlic, fresh basil, olive oil, and mozzarella (if using).
    • Season with salt and pepper to taste. Let the mixture sit for 15–20 minutes to allow flavors to meld.
  2. Toast the Bread:
    • Preheat your oven to 400°F (200°C).
    • Arrange the bread slices on a baking sheet and brush them lightly with olive oil on one side.
    • Toast in the oven for 5–7 minutes, or until golden and crisp.
  3. Assemble the Bruschetta:
    • Spoon the tomato mixture onto the toasted bread slices, spreading it evenly.
    • Serve immediately and enjoy!

Optional Add-Ons:

  • Sprinkle with grated Parmesan or crumbled feta instead of mozzarella for extra flavor.
  • Add a drizzle of balsamic glaze for a touch of sweetness.
