- 6–8 Campari tomatoes (or about 1 lb), diced
- 1 small clove garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (optional)
- Mozzarella Cheese (optional)
- Salt and freshly ground black pepper, to taste
- 1 baguette or crusty bread, sliced
- 1–2 tbsp olive oil for brushing bread

Instructions:
- Prepare the Tomato Mixture:
- In a bowl, combine diced Campari tomatoes, minced garlic, fresh basil, olive oil, and mozzarella (if using).
- Season with salt and pepper to taste. Let the mixture sit for 15–20 minutes to allow flavors to meld.
- Toast the Bread:
- Preheat your oven to 400°F (200°C).
- Arrange the bread slices on a baking sheet and brush them lightly with olive oil on one side.
- Toast in the oven for 5–7 minutes, or until golden and crisp.
- Assemble the Bruschetta:
- Spoon the tomato mixture onto the toasted bread slices, spreading it evenly.
- Serve immediately and enjoy!
Optional Add-Ons:
- Sprinkle with grated Parmesan or crumbled feta instead of mozzarella for extra flavor.
- Add a drizzle of balsamic glaze for a touch of sweetness.
