This recipe in its current state can really help you squeeze the most flavor and potential out of many of your included items in this Combo Box. We definitely suggest adding some meat and cheese to take things up to the next level!
Ingredients:
- 3 red bell peppers, halved & seeds removed
- 2 Russet potatoes, diced small
- 1 tomato, diced
- 1/2 cup Brussels sprouts, finely chopped
- 1/4 cup baby carrots, finely chopped
- 1/2 cup pineapple, diced (for a sweet twist)
- 2 tbsp fresh basil, chopped
- 1/2 tsp salt & pepper (to taste)
- 1 tbsp olive oil
Instructions:
- Preheat oven to 375°F.
- Sauté veggies – Heat olive oil in a pan, then cook potatoes, Brussels sprouts, and carrots until soft (about 10 min). Add tomatoes and pineapple, stir for another 2 min. Season with salt & pepper.
- Stuff the peppers – Fill bell pepper halves with the mixture and place them in a baking dish.
- Bake for 20-25 min until the peppers are tender.
- Garnish with basil and enjoy!
