Guacamole Time!

This recipe is perfect for a gathering or to enjoy over a couple of days. Here’s what you’ll do:

Prep the Veggies:

  1. Finely dice the red onion, tomatoes, jalapeƱo, and garlic. Mincing them very small will ensure a smooth and pleasant texture in your guacamole.
  2. Chop the cilantro. You can chop it a bit finer or leave some larger pieces depending on your preference.

Mash the Avocados:

  1. Cut the avocados in half, remove the pit, and scoop out the flesh. In a bowl, mash the avocado with a fork. Leave it a little chunky if you like a more rustic guacamole.

Assemble and Season:

  1. Add the finely diced vegetables, chopped cilantro, and the juice from both limes to the mashed avocado.
  2. Season with salt as you go. Start with a small amount and taste as you mix. You can always add more salt but you can’t take it away!

Mix and Serve:

  1. Give everything a good fold to combine. Taste again and adjust the seasoning with more lime juice, salt, or even a touch of black pepper if desired.

Tips:

  • For best results, use ripe avocados. If your avocados are not ripe, set them on your counter instead of the fridge for a warmer ambient temperature. Putting them in a paper bag can promote faster ripening as well.
  • Guacamole browns quickly due to the avocado. If you’re not serving it right away, you can minimize browning by leaving the pit in the guacamole and pressing plastic wrap directly onto the surface.
