Fresh, locally made tortillas are in! These tortillas are my favorite! The yellow corn is so flavorful. The flour tortillas can be seared to PERFECTION to get a nice crisp. The chips… thick, crunchy, and salty. These have a nice bite and will be the addition you need for guacamole, salsa, or chilaquiles!

Ingredients:

• Tomatoes (quantity to your preference)
• Tomatillos (quantity to your preference)
• Chiles (quantity to your preference, see spice level note below)
• ¼ Onion, chopped
• 2-3 Cloves garlic
• Cilantro, chopped (amount to taste)
• Lime juice (amount to taste)
• Salt, to taste
• Chicken bouillon (optional, to taste)

Instructions:

1. Roast or char the tomatoes, tomatillos, and chiles. This can be done under a broiler or on a stovetop over high heat until lightly blistered. Alternatively, roast in a preheated oven at 400°F (200°C) for 15-20 minutes, or until softened and lightly browned.
2. Combine roasted vegetables, onion, and garlic in a blender.
   Blend until a relatively smooth consistency is achieved. You can leave it slightly chunky for a more rustic salsa.
3. Add chopped cilantro and lime juice.
   Season with salt and optional chicken bouillon to taste.
4. Blend again until well combined.
   
5. Adjust seasonings to your preference. You can add more lime juice, salt, or cilantro for a brighter flavor profile.

Spice Level Note:

• For a spicier salsa, use more chiles or include the seeds.
• For a milder salsa, use fewer chiles and remove the seeds before blending.

Additional Tips:

• You can adjust the amount of vegetables used to create your desired flavor profile.
• For a smoother salsa, remove the skins from the tomatoes and tomatillos after roasting.
• Taste your salsa throughout the process and adjust seasonings as needed.
• Don’t be a wimp and add all the chiles in your salsa!
